10 POUNDS! And Food Journal Day 9

Yes, that 10 pounds up there in the title means I have lost 10 lbs! I'm not making it official since it's not a Wednesday and let's be honest, my food choices yesterday sucked. I blame Utah State University for having graduation and it being too busy at work for me to eat until like 10:00 pm. I don't really feel like I'm losing any weight though. I know I am because the scale says so and it wouldn't lie to me, right? And I guess my belt is in another notch, but other than that, I still see the muffin top and can grab the leftover belly from the baby. I guess I should exercise too, huh? Blah. Me and exercise are not friends.



Today is a day off (other than a small meeting I need to attend in the morning) and I might not even track my food very consciously. We'll see. We're planning burgers for dinner with corn on the cob and roasted potatoes on the grill. Yum. Ok well, early Saturday and I need coffee to commence the day.

The Help & Rosa Park's Peanut Butter Pancakes

I finished reading The Help yesterday. It's one of those books that you read and next thing you know you're halfway through. I enjoyed it and cried at the end. And I've been in a historical book phase right now. I like immersing myself into a different era and realizing how much has changed. Honestly, sometimes I wish I was born in a different generation but can you imagine your life without internet? Remember when we had to use encyclopedias to get information for reports in schools. Ha, oh how things have changed.

I'm not going to review The Help because, well, because I don't want to. I enjoyed it, and I read it fast, and I haven't seen the movie and I do recommend it. The end. 

I am going to tell you about some awesome pancakes. What does this have to do with The Help? Only that when I was looking for a recipe on Pinterest for some peanut butter pancakes, this one came up. And it's supposedly Rosa Park's recipe. And she was black, if you didn't know that, and she had a major roll in the civil right's movement. And that's what leads me back to The Help. 

Ok so pancake recipe. We were trying to figure out what to have for lunch and instead of a PB&J which Mercy would just destroy and Grace would take an hour to eat, I was thinking about PB&J pancakes. So jumped on Pinterest. I love Pinterest. What did we do before it? Oh ya, Google search. 

Decided to have the girls help me. Here's some pics. And video cause they're cute.




They each had a part and we survived it mostly mess free. Mercy was trying to eat the peanut butter out of the liquid stuff. Ewww. Raw eggs. The recipe calls for 2 TBSP baking powder. I only had 1. But luckily I have a cook book that has a list of substitutions and you cane make baking powder by mixing baking soda and cream of tarter. Both of those I had. Score!

Here's how the pancakes turned out. I actually make them today too cause they're good. 

I hate chemistry and I know that's all involved in baking and stuff. You should have seen the bowl before I started cooking 'em up. The baking powder made the batter fluff up like a pillow. That's what makes these so good. And the peanut butter. I think next time I might experiment with honey instead of sugar. I got some fresh honey straight from the hive and I think that would pair well with the peanut butter. And maybe some bananas. Mmmmmm.












Food Journal Day 8

I should have eaten more yesterday but I just wasn't hungry. I could have had a snack before bed. I just wasn't hungry. I blame a sore throat and NyQuil. I was OUT within 10 minutes of drinking the yucky green stuff. But I needed that sleep. I feel like I didn't do much yesterday but I balanced our checkbook and our budget, got some bills taken care of, colored with the girls, took them all to the ENT (Mercy's tonsils come out June 13! Ack!) and then came home, cooked dinner, made a grocery list and blew my budget at Smith's. But that's all another story. Food journal for yesterday ( I know, not healthy at all, I'll do better today, I swear!)



600 calories left. Wow. I could have had lunch, ha. We were out of food though. I mean, very little food in our house other than pasta, bread, chips, and other junk that I'm trying not to eat. The other problem is that I didn't eat breakfast. My eggs that are listed were eaten at noon. But like I said earlier, I blew my budget at the grocery story and now we have food in our house. I'll post about that later. But this is what I did yesterday.

Food Journal Day 7

Yesterday was rough. Last day of work before a glorious day off. And I should have written down what I was eating as I went. The other thing is I changed up my food at work. AND I took a yogurt that I forgot about. Boo.

Anyway, here's what I ate. Kinda.


I also had a few bites (like two) of an old Lean Cuisine that was in my freezer. It was gross, hence the only two bites.

My dinner was a Gaspacho Spinach Salad at work. It has roasted onions, cucumbers (and avocado and tomatoes but I didn't have those put on it because they're gross) and our Lime Chipotle Dressing. I added chicken and did half spinach and half romaine. I ate maybe a quarter of it. I just wasn't hungry. And it comes with our Jalapeno Cornbread, which I ate half of. So these numbers are estimates.

Today is my day off (yippee!!!!) and I'm probably going to be a little bit bad today because I deserve it. And I need to shop for the next few weeks. Trying to decide if I want to do that with all 3 kids, which I have never done before. The thought really, really scares me.

Bethany Lynn - 9 Months

This puffy eyed little girl is 9 months old today. She sleeps mostly through the night. She naps 1-2 times a day. She's formula fed now but eat finger foods like Cheerios and Puffs. She loves baby food, especially veggies. And she'g going to be walking on her own any day now. In fact she can cruise around just holding on to my fingers. And she stands up on her own all the time. She loves her polka-dot lovey. And the dog. She sleeps with her pink hippo and her Scentsy Lamb every night. She doesn't take a binkie anymore (thank goodness!). She's in 6-9 month clothes finally. And most of those that we have are summery so that is perfect. She told me she doesn't want to be a big sister for a LONG time. I'm going to listen to her on that :) She babbles all the time and will let out a string on da-da-da in a deep voice which kills me. And she laughs at her sisters all the time. Bethany is a blessing in our lives and she's so damn cute too. I love this kid!!


Wednesday Weigh-In

I have been bad and I have been weighing myself every day. I'm going to try and resist the urge and only weight one time a week, probably Wednesdays. And then I'll do a video update once a month. Anyway, here's what the scale said this morning:


And if you noticed on my sidebar - MyFitnessPal says I'm down 6 lbs! In one week! Granted, this is mostly water weight, but it's also cause I'm aware of what I am eating and I'm tracking it and trying to make healthier choices. I know I'm not going to lose 6 lbs every week, and 1-2 lbs a week is probably more like it, but I hope I can continue on this path and reach my goal weight by either my birthday (June 30) or by when Grace starts 1st grade. Agh, she's going to be in first grade. Pray for me and wish me luck. I haven't had many cravings yet and I'm hoping to keep them all at bay.

Food Journal Days 5 & 6

I had to work all day yesterday because it was inventory day. I thought I'd cave at work and eat something like gelato or Grace's chicken tenders, but I was good! Taking snacks helps. And I tried to drink water if I thought about eating.

I seem to be getting a ton of protein, but considering I used to get basically no protein, I'm not going to complain.
